About Me

My name is Caroline and I am a newlywed in my mid-twenties.  By day I am a scientist, but by night I am a runner, guitar-player, jewelry-maker, gardener, and wannabe chef.  I am enjoying learning to cook in ways that allow me to enjoy amazing food even with dietary limitations.  I have been vegetarian (by choice) for 14 years, Type 1 diabetic for 18 years, and celiac (diagnosed June 2011).  By learning to cook using fresh ingredients and limiting the use of processed foods, I have found that I can eat better than I ever have before (yet, I have still managed to lose over 30 pounds since I graduated college almost 5 years ago)!  I wanted to start this blog to share my journey in the kitchen, trying new ingredients and new methods of cooking!  I am happier and healthier than I have ever been before and hope that my journey inspires others to try new things in the kitchen as well!  Please feel free to comment as frequently as you want or email me at caroline.ritchie103@gmail.com.  I would love to hear your suggestions, stories, etc.!
